The jewel of Apulian dairy tradition. A thin shell of freshly stretched mozzarella is filled with stracciatella — delicate shreds of curd bathed in cream — and tied by hand. Cut it open at the table and let the heart flow.

Milky, buttery and delicate; a tender outer skin gives way to a rich, creamy centre.

Perfect with

Ripe tomatoes, peaches, figs, prosciutto crudo, basil and extra-virgin olive oil.

Serving tip

Take it out of the fridge 20–30 minutes before serving and open it just before eating.
